- I seasoned the steaks about two hours ahead of time. I used Wegmans Garlic and Herb seasoning, but I suppose any seasoning would work. McCormick has a similar seasoning available.
- I skipped the cayenne pepper but kept the paprika in the flour mixture.
- I added a bit of the garlic and herb seasoning to the flour as well.
- To make the gravy, I followed Alton Brown’s instructions. This means that I added chicken broth to enhance the flavor of the gravy. I skipped the thyme Alton recommended, though. Again, watching the video was really helpful!
